Quorn Chilli
Here's my recipe for Chilli con Quorn! I used to make this loads, so decided to make it again. It's not too bad, I've started to love real mince again, so quorn isn't often on my food list. Sorry about the rubbish quality of the photo, it looks like a massive mess, but trust me, it's pretty tasty :).
Ingredients:
300g frozen quorn mince
1 1/2 tsp of chilli powder, more if you like it hot!
3 cloves of garlic
1/2 tsp of chilli flakes1/2 tsp cumin
1/2 tsp cinnamon
2 bay leaves
400g tin of chopped tomatoes
About 200 ml of pasata300ml veggie stock
1 tbsp oil
1tsp corn flour
frozen peppers (or fresh ones)
Method:
1. Heat the oil in a frying pan, add the garlic and fry for a minute
2. add the chilli powder, chilli flakes, cumin, cinnamon, bay leaves for around a minute3. add the frozen quorn, and mix with the herbs and oil and cook for around 3/4 mins until coated
4. add the chopped tomatoes, pasata and 300ml of veggie stock and bring to boil for around 10 mins
5. mix the cornflour with a few drops of water so it becomes a paste, add to the mixture and add the peppers6. simmer for about 10 minutes. Serve with rice
